The secret to cook a delicious rack of ribs (beef or pork) is patience and keeping an eye on them.  Properly cooked ribs should pull of the bone with your teeth, that's why the recommended temperature to set up your grill should be about 225°F or the closest that you can get to that temperature on an indirect flame.

Place the rack with the curved part facing down, let it bleed a little bit (this means that the bone is getting hot) and then turn it over. This should take 30 to 45 minutes.

Remember to keep an eye on them and turn them when necessary . Nobody likes a black over cooked and dry ribs.
